A fav. slow cooker recipe for the whole family!

Along with my slow cooker salsa chicken recipe, this slow cooker recipe is constantly in our dinner rotation and is an excellent dinner for the whole family! I find that the measurements below create anywhere from 4-5 portions and are served perfectly over my 15-minute jasmine rice recipe. The beef gets so tender and flavorful after cooking on low for 6 hours and it’s truly just a fabulous recipe that my whole family loves.

Any slow cooker will work for this recipe! This is the one I use from Crockpot and I’ve had it for 8 years — it’s held up so well and is pretty easy to clean too!

INGREDIENTS

  • Boneless beef chuck roast: I highly recommend using a full chuck roast and slicing at home (vs. buying pre-sliced). I find that it's typically sliced/chopped very small at grocery stores and it doesn't get tender like it should be in this recipe when fully cooked.

  • Beef bone broth: you can use either beef bone broth or beef broth but regardless, I recommend a beef broth for this recipe. I really love the beef bone broth from Kettle and Fire for this recipe! Code MYTODDLERSKITCHEN will get you 20% off of your purchase on their site :)

  • Low sodium soy sauce: a key ingredient in this recipe! Along with sesame oil, soy sauce gives this recipe it’s core flavor here.

  • Light brown sugar: provides subtle sweetness to this recipe. Dark brown sugar can be used as well.

  • Sesame oil: this gives the recipe some incredible flavor (and not much is needed to add that flavor here).

  • Minced garlic: garlic is another key ingredient in this recipe that you don’t want to miss! I highly recommend freshly minced garlic vs. garlic powder here - it makes a huge difference.

  • 2 tbsp cornstarch: you’ll whisk this with some of the broth mixture towards the end of the cook time to thicken up the recipe.

  • Broccoli florets: fresh or frozen broccoli work here; if frozen, it will take the full additional hour cook through in slow cooker after adding in; fresh broccoli will take around 30-40 minutes.

  • Salt & pepper to taste: the recipe already has salt through the soy sauce and beef broth so I would wait until the end to add salt and pepper. Just taste the beef/broccoli when it’s fully cooked and if you feel that it needs added salt and pepper, you can season before serving.

  • Sesame seeds: you can add a sprinkle of these (and/or green onions) for garnish - totally optional!

DIRECTIONS

  1. Mix broth, soy sauce, brown sugar, sesame oil, and garlic in small bowl

  2. Place thinly sliced chuck roast strips in slow cooker and pour mixture over beef, coating well

  3. Heat on low for 5 hours, then whisk 1/4 cup of broth mixture with 2 tbsp cornstarch in separate bowl. Stir this back in the slow cooker

  4. Add broccoli and mix everything together. Cover and heat on low for 1 more hour.
