A creative + easy way to serve a meal-time favorite to your little ones (with an opportunity to include veggies!)

If you’ve browsed through my recipes, you may have noticed that I’m a big fan of making things in the waffle maker. Grilled cheese is no exception! It’s an easy and loved lunchtime go-to over here and I recently discovered that making it in the waffle iron just makes lunch (or dinner) so much more fun. Minimal ingredients, a short cook time, and like several of my recipes, an opportunity to include some added nutrition through superseed boosters, vegetables, and protein.

I like to use the Organic Riced Broccoli from Sprouts (comes frozen) to add some easy veg to this recipe. I just sprinkle it in frozen and it just heats up right in the waffle iron when you make the grilled cheese.

Ingredients:

  1. 2 slices of bread

  2. Handful of shredded cheeses (or 1-2 pieces of sliced cheese). I like to use a combination of cheddar & mozzarella.

  3. Superseed boosters like hemp hearts (optional)

  4. Protein add-ins like grilled chicken, turkey pepperoni (optional)

  5. Veggie add-ins like broccoli or spinach (optional)

Directions:

  1. Heat waffle iron & spray with non-stick cooking spray

  2. Lay out one slice of bread & fill with cheese, superseed boosters, and any add-ins

  3. Cover with second slice and close waffle iron

  4. Cook until both sides are a nice golden brown (times will vary depending on waffle iron)

  5. Enjoy sliced in halves or cut into strips!

Notes:

  • The superseed boosters from Tiny Sprouts are great add-in for this recipe! Hemp seeds, flax seeds, or chia seeds add some extra nutrition and can easily be sprinkled in. Code MYTODDLERSKITCHEN gets you 10% off your purchase on their site.

  • When serving this to little ones, be mindful of the amount of sodium in cheeses and the amount of cheese you put in the sandwich. I keep it moderate when it comes to cheese so it’s not too tough to chew and the sodium isn’t too high.

  • You can freeze these for up to 2 months! I would freeze in pre-waffled form and when it comes time to eat, thaw overnight in fridge, and heat in the waffle iron as directed in the recipe.

  • Freeze for up to 2 months in air-tight container/bag. To thaw from frozen, place in fridge overnight or defrost and heat up in microwave.
