pizzadillas

As simple as it sounds - all the pizza flavor in a quesadilla for an easy lunch or dinner!
When it comes to toddler lunchtime (especially when I don’t have leftovers), I feel like I naturally gravitate to making a quesadilla. It’s easy for me to prepare, I can typically use things I have in the fridge, and there’s always opportunity to include some great flavor and nutrition. And that’s where the pizzadilla comes into your kitchen.
INGREDIENTS
About 1/2 tbsp butter (for pan)
1-2 TBSP pizza sauce (amount will vary based on preference of saucy-ness)
1/4 cup (ish) mozzarella cheese (add your desired amount)
Add-ins like pepperoni, sausage, peppers, etc. (should be cooked)
Sprinkle of dried basil & oregano (or italian seasoning)
DIRECTIONS
Heat pan on medium heat
Add in butter and melt, then place your first tortilla in pan
Build your pizzadilla, first by adding sauce, followed by cheese, add-ins, and seasonings
Heat both sides until golden brown
Let cool & cut appropriately for your little one's age (I do triangles for my toddler, which makes about 8 mini triangles)
NOTES

If storing in fridge, these may get soggy with the pizza sauce so I wouldn’t recommend storing in the fridge. That said, you can certainly freeze for about a month and then thaw and re-heat in microwave.
I like to use the turkey pepperoni from Applegate here, which can be found in most U.S. grocery stores.
