Easy, delicious, no baking required, and minimal ingredients! These taste like actual cheesecake in cracker form (but healthier) and are a super simple and delicious snack to add to your rotation. If you’re looking for an easy, no-cook sweet treat, this is definitely one to try. The Honey Cinnamon Sweet Thins from Simple Mills are the cracker that gives this recipe the cheesecake crust-like taste, but any graham cracker you have will work.

Since graham crackers can be harder in texture, I’d wait to serve this to your little one(s) until they can comfortably take bites and chew. To give this a softer texture, you can place in the fridge for 20-30 minutes and the cream cheese on top of the graham cracker will actually make them softer in texture. Remember to avoid honey in the graham cracker ingredients if your little one is under 1. HERE is an article from Solid Starts on this recommendation and more on honey that I find helpful!

INGREDIENTS

  • Graham crackers (for this recipe, I like to use the Simple Mills Honey Cinnamon Sweet Thins)

  • Cream cheese

  • Superseed boosters, like milled chia seeds (optional)

  • Thinly sliced fruit (strawberry, kiwi, banana, peach, etc.)

DIRECTIONS

  • Spread a thin layer of cream cheese on top of graham crackers

  • Sprinkle superseed boosters (and other seasonings like cinnamon) on top

  • Add fruit to each graham cracker

  • Serve chilled or right after making!

NOTES

  • Graham crackers may contain honey, so if you have a little one 1 or under, make sure to read the ingredients and buy a cracker without honey.

  • If you want your graham cracker to have a softer texture, assemble your cheesecake crackers and place in fridge for about 20 minutes! This way, they will soften up.

  • In addition to superseed boosters, you can sprinkle on some cinnamon!
