A breakfast quesadilla with cream cheese, blueberry deliciousness!

This breakfast quesadilla has up to only 5 ingredients and has become a staple in our breakfast rotation! You can serve right after toasting on the pan, or store in the fridge after heating up and it tastes just as good chilled. My toddler LOVES this one (especially since the inside is blue, which makes it fun)!

INGREDIENTS

  • 1 tortilla

  • Thin layer of cream cheese

  • Handful of blueberries

  • Honey drizzle (optional; avoid for those under 1)

  • Sprinkle of cinnamon & superseed boosters

DIRECTIONS

  • Spread thin layer of cream cheese on half of a tortilla

  • Add blueberries and slightly smash with the back of a fork

  • Add all other ingredients, then fold tortilla in half

  • Melt a little butter (about 1/4 tbsp) in pan and toast both sides of the quesadilla until slightly golden

  • Cut into triangles

  • Let cool before serving!

NOTES

  • Store in fridge for 1-2 days. You can serve chilled or warmed! I haven't tried freezing these just yet but I'll update the notes when I do. If you do freeze, I'd freeze before toasting in the pan, thaw in fridge overnight, and heat in pan the next day.

  • You can add other fruits with or instead of blueberries to this recipe! Strawberries and bananas would be delicious!

  • Most tortillas will work in this recipe!

  • Make sure to avoid the honey in this recipe if your little one is under 1. If you want to sweeten, add a very small dash of maple syrup (or serve maple syrup on side for dipping) or add ripe bananas inside for some natural sweetness.
