A quick and easy 4-ingredient blender pancake!

It doesn’t get easier than this 4-ingredient, blender pancake recipe! I’ve been making these for my little one since he started his solids journey and couldn’t love this recipe more. It has simple ingredients, everything comes together in a blender, and it freezes so well!

I pair these with some berries and maple syrup for dipping for a quick breakfast! If I prepped in advance, I just warm up in the microwave for 5-10 seconds (if pulling from fridge) or thaw from frozen and warm up in microwave. You can thaw in fridge overnight or set out on countertop for an hour or so to thaw. These are the silicone dip containers that I love to use to hold syrup! They come in several cute shapes and hook onto your silicone plates.

WHAT AGE IS THIS RECIPE SUITABLE FOR?

This recipe can be made for littles who have started solids and above! It does contain eggs, which are an allergen, so I would recommend serving eggs by themselves vs. in a pancake recipe for the first time (not expert advise - this is just what we did). Below are a few links from Solid Starts on ingredients in this recipe, for reference! In regards to add-ins, I would avoid chocolate chips until your little one is around 2, per Solid Starts’ recommendation.

EQUIPMENT

Other than the ingredients listed here, you’ll need two key pieces of equipment:

  1. High-speed blender: I love the Nutribullet blender and couldn’t recommend this one enough! It takes little time to blend and makes amazing pancakes, waffles, smoothies, and so much more. The oats do need to be blended in this recipe - I’ve tried them without blending and the texture just didn’t feel right. If you don’t have a blender, a food processor would work to combine ingredients also! I’ve made them in our Kitchenaid food processor as well and they’ve turned out great!

  2. A good, non-stick pan: We’ve been using the Hexclad pans for a while now and I’ve been incredibly impressed.

INGREDIENTS

  • Very ripe medium to large bananas (ripeness is key for sweetness!)

  • Eggs

  • Rolled (or old fashioned) oats

  • Ground cinnamon

  • Add-ins (optional - see notes!)

DIRECTIONS

  1. Place all ingredients in a high-speed blender and blend until smooth (if adding mix-ins like chocolate chips or blueberries, mix-in by hand after blending)

  2. Bring pan to medium heat, then spray with non-stick spray, add ghee, or unsalted butter to grease pan

  3. Pour about 1/4 cup of pancake batter per pancake and heat both sides until slightly golden and middle is cooked through

  4. Let cool and enjoy!

NOTES

  • Store in fridge for 2-3 days in sealed container; freeze for up to 2 months in air-tight container.

  • Bananas in this recipe should be very ripe for that natural sweetness. If you feel that the pancakes need a bit more sweetness, add about 1 tbsp maple syrup or honey to the batter (note: honey should be avoided for littles under 1).

  • Mix-ins can certainly be added to this recipe (we like chocolate chips or blueberries)! Mix these those in with a spoon after blending (do not blend with mixture).
