2-ingredient cookie tray banana ice cream

A delicious, healthier frozen treat with lots of fun topping and mix-in options.
We love going out for ice cream but sometimes, it can be equally as fun to make something (a little more nutritious) at home and get your littles involved in the kitchen in the process! This recipe has two simple ingredients (bananas + milk) with several options for mix-ins and toppings. The key in this recipe is to use FROZEN and RIPE bananas. Both of these together will add the right texture and sweetness to make a simple ice cream blended with milk.
For this recipe I use the Souper Cubes Cookie Tray, but you can use so many different molds to store it in the freezer as long as it’s sealed. The fun thing about this recipe is that you can also use the mixture to pour into popsicle molds and make some super easy banana pops! If you’re making them this way, just swirl in your mix-ins like chocolate chips, sprinkles, etc. into each popsicle mold and freeze.
INGREDIENTS
2 peeled, chopped, and frozen very ripe bananas (the ripeness adds the sweetness to this recipe)
4 tbsp milk (I've used almond milk and whole milk and this recipe has worked well with both)
Toppings (sprinkles, almond butter, chocolate chips, etc.)
DIRECTIONS
Peel & chop two very ripe bananas and freeze (for at least 2 hrs)
Once frozen, blend bananas with milk until texture is smooth (like a soft-serve ice cream)
Scoop into cookie tray and add toppings of choice
You can serve this right after blending or put back in freezer! When freezing, cover & seal cookie tray (you can also use any air-tight container here).
When ready to serve, let it sit out at room temperature for about 10 minutes before eating for a softer texture.
MIX-IN AND TOPPING IDEAS
Chocolate chips
Sprinkles (I love the ones from Supernatural and you can get them on Amazon!)
Peanut butter/almond butter swirl
Crushed graham crackers or cookies
Superseeds from Tiny Sprouts like milled chia seeds or milled flax seeds - these can add extra nutrition in this recipe and act as sprinkles
The Oat Haus granola butter (it’s nut-free) specifically the brownie batter and cookie dough flavors would be delicious here
NOTES
Freeze for 3-4 weeks in air-tight container. Flavor will be best within the first week or so but you can certainly freeze for longer.
This mixture can also be poured into popsicle molds to make some delicious homemade popsicles!
The bananas in this recipe should be frozen before making. This creates the creamy ice cream texture with the milk -- otherwise it will be too liquid-y.
Ripe, frozen bananas are best here for added natural sweetness. If you feel that the recipe needs to be a little sweeter, you can mix in about 1 tbsp of honey or maple syrup to the mixture.
