mediterranean pita pockets

Delicious and simple flavors stuffed into pita pockets for an easy lunch or dinner.

This easy dinner recipe uses my Grilled Turkish Kofte (grilled Turkish meatball) recipe along with some simple ingredients like hummus, feta cheese, cucumbers, and some greens for a delightful pita pocket. I like to toast my pita pockets with a little butter for some extra flavor! You can let everyone “build their own” pita pocket by setting all ingredients out or make yourself. For my toddler, I like to fill his pita pockets with hummus and feta cheese and a little bit of the grilled meatballs.

You can really make these with your protein of choice! To make it the quickest way, grab a rotisserie chicken from the store so there’s truly no cooking required. OR you can fill them with some homemade grilled chicken breast or thighs!

INGREDIENTS

  • 4 round pita pockets

  • Thin layer of hummus (to spread)

  • 1/4 cup crumbled feta cheese

  • 1/2 finely diced cucumber

  • 1/2 chopped red onion (optional)

  • 1-2 TBSP butter

  • Turkish Koftes (or other protein of choice, like rotisserie chicken!)

DIRECTIONS

  • Heat a pan on medium heat, then add a dash of butter. Toast all 4 round pita breads on each side to get a nice crisp, adding a little butter in between each bread.

  • Cut round pita breads in half (I buy the "pocket" ones so they easily open) and open up the inside to get ready to fill.

  • Finely dice cucumber and red onion to get ready for adding into bread

  • Spread thin layer of hummus on bottom of pita pocket half, then top with cucumbers, red onion, and feta cheese

  • Finely cut up meatballs (warm) and place inside the bread

  • Let cool slightly & serve!

For storage of this recipe, store all ingredients separately vs. inside of the pita pocket in fridge to prevent soggy-ness!
