When I know we’re making our fried rice recipe for dinner, I seriously think about it the whole day because I am so excited. It’s so savory & delicious, and I love that it incorporates veggies! My toddler loves rice, but veggies have certainly been a struggle for us recently. That said, this recipe is a huge hit with him and he enjoys eating the peas & carrots. 

We like to have this fried rice with chicken most frequently (grilled, rotisserie, etc.) but it also pairs well with shrimp, pork, or seasoned ground beef. There’s also the option to just serve the rice alone as it includes veggies and protein (from the egg). 

This is another one of those recipes where you can add more or less ingredients depending on your preference. Here, the key customizable componenthan this if you’d like. I always recommend starting out with a smaller amount of each when you’re unsure, and adding a little more to taste. 

I hope you enjoy this fams are the soy sauce and sesame oil (in addition to salt & pepper, which can always vary based on your preference). The amounts of soy sauce and sesame oil I note in this recipe are fairly moderate and you can have more or less tily favorite of ours!

JASMINE RICE INGREDIENTS

  • 1 cup jasmine rice

  • 1 cup water

  • 1/2 cup chicken broth

  • 1/4 tbsp unsalted butter

  • Salt (to taste)

MAKING THE JASMINE RICE

  • Bring a small pot to medium heat and melt butter.

  • Rinse jasmine rice, then add to pan and mix with butter for 2-3 minutes (this will give it a little toast).

  • Add water and chicken broth, cover pot, and bring heat to high.

  • Once water comes to a boil, turn the heat to the lowest setting and let the rice steam for about 14 min.

  • Season with desired amount of salt once finished.


FRIED RICE INGREDIENTS

  • 1 cup cooked jasmine rice

  • 1 medium finely diced onion

  • 1 cup thawed peas & carrots

  • 1/2 tbsp sesame oil

  • 2 tbsp soy sauce

  • 2 cloves minced garlic

  • 1/4 cup chopped green onion

  • Salt & pepper to taste

  • Sesame seeds to garnish (optional)

MAKING THE FRIED RICE

  • Heat a medium pan with high sides (or wok) to medium heat. Sautee onion, peas & carrots with sesame oil & a dash of s&p. Once onion is slightly golden, add garlic and mix everything well.

  • Add jasmine rice to pan and mix with everything. Form a hole in the center and crack your egg, then scramble it.

  • Once egg is scrambled, mix everything together with soy sauce, and another dash of s&p to taste. Add green onion, cover pan, and take off heat.

NOTES

  • Store in fridge in air-tight container for 2-3 days.

  • Soy sauce and salt amounts can be modified to taste based on your preference. If serving this to babies, be mindful of the salt content.

  • If serving this to babies or littles around 1, I would recommend smashing the peas when serving.

  • You can use another rice of preference instead of jasmine rice - this is just my favorite but long grain white rice would work well also.
