parmesan-crusted tilapia

A quick oven-baked recipe with a delicious parmesan breading.
We love tilapia in this house and an oven-baked, parmesan crusted method is our favorite way to make it. The prep here is quick — just prepare the coating, press onto the tilapia filets after brushing with olive oil, and bake! Fish can be a hit or miss with my little one but he totally LOVES this recipe. The breading is simple yet is has some dynamite flavor (lemon pepper is the key seasoning when it comes to fish, in my opinion). I like to serve with a simple veggie (like carrots) and a pasta or rice.
INGREDIENTS
2 tilapia filets
1/3 cup shredded parmesan cheese
2 tbsp panko breadcrumbs
1/2 tbsp lemon pepper seasoning
1/8 tsp salt
1/2 tbsp chopped parsley
Brush of olive oil (before coating tilapia)
Lemon slice to garnish (optional)
DIRECTIONS
Preheat oven to 400F
Combine parmesan cheese, panko breadcrumbs, parsley, lemon pepper seasoning, and salt in a bowl
Pat tilapia filets dry with paper towel and brush with olive oil
Place tilapia filets on a baking tray (I line it first with parchment paper) and press coating on the top of the filets with your hand. For any excess breading mixture that falls off, place back on top of the filets.
Bake for around 14 minutes (internal temperature of cooked tilapia is 145F)
NOTES
I like to buy frozen tilapia filets from Trader Joe's for this recipe (I let them thaw at room temperature for a few hours before making the recipe) but you can certainly buy fresh filets!
I haven't tried freezing this recipe just yet, so I'll revert back and edit the notes once I do. In the meantime, you can keep this in the fridge for up to 2 days. Note that the breading may get a little soggy in the fridge, but the flavor will still be there.
