air-fried zucchini tots

A delicious and simple air fryer tot packed with zucchini and cheesy flavor.
These zucchini tots are one of my most favorite make-ahead meals for the week (and freeze SO well). The preparation is simple and they’re just so, so good in the air fryer (although you can make these in the oven too). Serve with a side of ketchup or ranch and you have one of your new favorite air fryer recipes for your little ones! Hope you enjoy this one as much as we do.
INGREDIENTS:
1 cup grated zucchini with all juices wrung out (from one medium-sized zucchini)
1 egg
1/4 cup shredded cheddar cheese
1/3 cup breadcrumbs
1/2 tsp Italian seasoning
1/4 tsp salt
1/8 tsp pepper
DIRECTIONS:
Preheat air fryer to 390F
Using a box grater, grate zucchini using a fine side. Place grated zucchini in a thin dish towel and wring out all liquid. You should be left with one packed cup of grated and wrung out zucchini.
Combine all ingredients in bowl (best to use your hands)
Form into tot-like shapes and set aside (if mixture is too wet, add 1-2 tbsp more flour here to thicken)
Spray tots with avocado oil spray and place tots inside air fryer basket
Air fry for 10-12 minutes, flipping halfway through. Should be slightly golden brown when finished.
Let cool for 5-10 minutes before serving!
TO OVEN-BAKE
Preheat oven to 400F
Combine all ingredients in bowl (see notes on how to rice broccoli)
Form into tot-like shapes, about 1 inch in length and 1/2 inch in width
Bake for 15-20 minutes, flipping halfway through until golden on both sides
Let cool before serving!
NOTES & SUBSTITUTIONS:
Zucchini: you can sub the zucchini for cooked and finely diced broccoli (about 1 full cup) here. Check out my broccoli tot recipe to see how I make ith broccoli!
Store in air-tight container in fridge for 2-3 days and freeze for up to 2 months. To re-heat from frozen, thaw in fridge overnight and heat for about 10 seconds (microwave times will vary, but these are small and take little time to warm up).
I like to use a small cookie scoop to scoop out the portion size, then form into tot shape with my hands.
The Italian seasoning in this recipe can be omitted if you'd like to keep the seasonings to just salt & pepper! These pair so well with ketchup or ranch for a dip!
