Your mini waffle iron can make so much more than just traditional waffles — it can make omelettes!

A creative way to serve a classic breakfast omelette. Whisk together some eggs with your add-ins of choice and pour right into the waffle iron for a quick meal for your little one! I make these for me and my husband as well - just serve right on top of some buttered toast. Your mini waffle iron make so much more than just traditional waffles — it can make omelettes!

Any waffle iron should do here - there are two that I rotate between (a mini waffle iron and a regular-sized one) and both are fantastic! I use this Mini waffle iron from Amazon! INGREDIENTS

  • 1 egg

  • 1 cooked & finely chopped breakfast sausage link

  • Small handful of chopped spinach

  • Small handful of shredded cheddar cheese

  • Pinch of salt & pepper

DIRECTIONS

  • Heat waffle iron

  • Spray with non-stick spray

  • Whisk egg with sausage, spinach, and cheese

  • Pour in mixture (place paper towel underneath waffle iron as it may spill over a bit) and heat until eggs are fully cooked through. Times will vary depending on waffle iron but it should take anywhere from 2-4 minutes on average!

  • Let cool before serving and cut appropriately based on your little one’s age.  

NOTES

  • You can substitute the add-ins for anything you'd like, or omit completely!

  • Make sure you mix the cheese into the egg mixture and don't sprinkle with cheese in the waffle iron -- this will cause the cheese to burn on top.

  • I'd freeze these for up to 1 month and refrigerate for 1-2 days at most. In either option, make sure there's no air in the way you store them.

  • I use a mini waffle iron for this recipe but you can certainly use a larger waffle iron -- I'd just add more eggs to the mixture.
