sweet potato fries (two ways)

A delicious, air-fried lunch, dinner, or side-dish for the whole family(and a fun way to serve veggies)!

Sweet potatoes are one of our most favorite side dishes to serve along with meals and they truly go along with so many meals! My toddler loves when I make these as fries, although there are so many ways to cut and prepare these based on little ones’ ages (cubes, mashed, wedges, etc.). In fact, steamed sweet potatoes were one of the first solids we offered our little one and to this day, it’s still one of his favorite things I make.

Sweet potatoes contain an array of nutrients and are especially high in beta-carotene—a nutrient that the body converts to vitamin A, which babies need for healthy eyesight, skin, and immune health. Sweet potatoes also offer vitamin B6 for brain development and fiber to support digestive health and a flourishing gut microbiome (source: Solid Starts). Overall, this is a simple and nutritious side dish with so much versatility — it’s a staple in my kitchen!

INGREDIENTS

  • 2 sweet potatoes, thoroughly washed & peeled

  • 2 tbsp extra virgin olive oil

  • 1/2 tsp salt

  • 1/4 tsp cumin

  • 1/4 tsp pepper

  • 1/4 tsp garlic powder

  • OPTIONAL: course sea salt to garnish after cooking

DIRECTIONS

  • Preheat oven to 400F

  • After washing and peeling sweet potatoes, cut into 1/4 inch fry-like shapes, wedges, or cubes.

  • Toss fries in bowl with olive oil and seasonings, ensuring all fries are well coated

  • Lay on baking sheet with parchment paper and bake for 35-40 minutes, tossing halfway through to get an even roast (if air frying, air fry on 380F for about 12 minutes)

  • Sprinkle sea salt over the fries when they come out of the oven, to taste (you can omit this step but the fries will likely need a little more salt after roasting)

NOTES & SUBSTITUTIONS

  • If air frying, air fry on 380F for about 12 min., tossing halfway through (note: air frying times will vary)

  • You can cut these in fry-like shapes, wedges, or cubes.

  • These will also be easy to mash with a fork for little ones that may be trying sweet potato fries for the first time.

  • Seasoning amounts can be modified per your liking, especially salt!

STORING & RE-HEATING

Store in air-tight container in fridge for up to 5 days. I feel that these are best re-heated on stove top (especially a cast iron) but you can also microwave or toss them in the air fryer for a few minutes on 350F.
