A two-ingredient fruit snack that’s perfect for the at-home snacking or on-the-go with a burst of delightful flavor in every bite.

Stuffed raspberries have become one of our favorite snacks for at-home, on-the-go, and for the lunchbox. I love this snack because I just need TWO ingredients (raspberries + filling) to create something super fun yet easy for my little one. This is another recipe where you can get your kids involved and help them stuff the raspberries with you, or just pick their filling of choice! Next time you’re buying raspberries, keep this quick snack in mind to change how you serve them in a fun way.

INGREDIENTS

  • Raspberries

  • Fillings (nut butter, cream cheese, chocolate chips, etc.)

DIRECTIONS

  • Rinse raspberries and let them dry off on a clean kitchen towel OR gently pat them dry with a paper towel

  • Using the back of a spoon or fork, place filling in the inside of the raspberry, being careful not to over-fill. See video on the right for how I do this!

  • Store in the fridge and eat cold or serve right away!

FILLING IDEAS

  • Chocolate chips

  • Peanut butter chips

  • Nut butter spread (peanut butter, almond butter, cashew butter)

  • Cream cheese

  • Granola butter (nut-free)

  • Sunflower seed butter (nut-free)

  • Hazlenut spread

KEEPING RASPBERRIES FRESH

Here is an article from Driscolls on keeping raspberries fresh after purchase. The most frustrating thing I experience with raspberries is when I buy them one day, and open the fridge the next day to see them already starting to mold. I’ve followed these tips from Driscolls AND placed a paper towel in the container (at the bottom of raspberries) to absorb the moisture from the raspberries. When I purchase this fruit, I try to consume within 1-2 days or I’ll freeze them (which I recently learned that raspberries can be frozen for about 1 year!)

NOTES

  • Store in the fridge for 1-2 days OR freeze in air-tight container for up to 12 months
