A simple and delicious roasted veggie recipe!
This recipe has as little as 4 ingredients and comes together so quickly (with an option to toss with some delicious garnishes)! It’s tender yet crispy, and pairs so well with a little cooked bacon, goat cheese, and crispy onions! It’s a perfect side dish for those fall meals and a great one to bring to holiday gatherings.

INGREDIENTS
Brussels sprouts trimmed and halved
Extra virgin olive oil
Sprinkle of salt
Pinch of black pepper
Garnishes to toss with after cooking (see notes below!)
DIRECTIONS
After trimming and halving brussels sprouts, soak them in a bowl of warm water for 10 minutes (this will get them a little softer before roasting). This step is optional as I've roasted them without soaking, but I do find that it makes the texture a little better in this recipe.
Place a rack towards the top of your oven and preheat to 400F. Toss brussels sprouts on a parchment paper-lined baking sheet with olive oil, salt, and pepper, coating brussels evenly. Be careful not to over-crowd baking sheet so they each roast well.
Place baking sheet in the oven and roast for 25-30 minutes, tossing halfway through to get an even roast. They will have a slight char on the outside when finished. Add any additional salt and pepper to taste after roasting.
Toss with garnishes (I like to toss with a little chopped + cooked bacon, crumbled goat cheese, and fried onion crumbles).
NOTES
Store in sealed container in fridge for 3-4 days. Reheat in microwave or toss on stovetop until warm.
After the brussels are done roasting, I like to toss with some cooked chopped bacon, goat cheese, and fried onion crumbles (you can get these at most US grocery stores). You can also toss with some parmesan cheese to keep it simple and add some extra flavor!
