oven roasted broccoli

A delicious (and super quick) way to prepare a healthy side dish!

Oven-roasted broccoli is one of my FAVORITE sides (and meal prep items) and takes such little time to prepare when made from a frozen bag! Not to mention, you can sometimes find a better deal on frozen broccoli vs. fresh broccoli. What’s even better - I don’t have to do any chopping! This recipe seriously dumps the bag onto a baking tray, seasons, and bakes right in the oven. I’m all for any recipe that makes my kitchen life a little easier and this one is no exception. My family (yep, even my toddler) scarfs this down because it’s that good.

INGREDIENTS:

  1. One 12 oz bag of frozen broccoli

  2. Drizzle of olive oil (about 1/2 - 1 tbsp)

  3. Sprinkle of salt, pepper, garlic powder, onion powder

  4. OPTIONAL: handful of shredded parmesan cheese

DIRECTIONS:

  1. Preheat oven to 400F

  2. Line a baking sheet with parchment paper (or silicone baking sheet)

  3. Empty frozen broccoli onto sheet and let it sit at room temperature while you wait for the oven to heat up (5 ish minutes)

  4. Drizzle olive oil over broccoli, then sprinkle with seasonings

  5. Bake for about 22-25 minutes (should be easily pierced with a fork when done and slightly crisp), tossing halfway through to get an even roast.

  6. Once out of the oven, option to toss with a handful of parmesan cheese.

  7. Let cool for about 5 minutes before serving!

Notes:

  • Store in fridge in air-tight container for about 4 days.

  • If you're making this from non-frozen broccoli, reduce your cooking time to around 18-20 minutes - still make the same way and ensure broccoli is washed and cut into florets before roasting.
