3-ingredient mango popsicles

A simple and hydrating freezer treat for kids! Only 3 ingredients, super refreshing, and too easy to make.
These 3-ingredient mango popsicles are a super simple & hydrating year-round treat! I love making these in the summer (hello 100F+ degree Texas weather), but you can make these any time of the year to store in the freezer for a nutritious treat for your littles. These popsicles are made with coconut water which gives them: great flavor (coconut and mango together are perfection), added nutrition (vitamin c, potassium, calcium), and hydration! Another neat thing about this recipe is that it can be made as popsicles or smoothies! It’s a super simple and versatile recipe - hope you enjoy this one!
INGREDIENTS
2 cups frozen mango
1 cup coconut water
1 tbsp fresh lime juice
DIRECTIONS
Add all ingredients to a high-speed blender or food processor until you get a smooth consistency with no mango clumps. Add more coconut water as-needed (if consistency seems too thick, add 1 tbsp more at a time)
Pour mixture into popsicle molds and freeze (takes about 6 hours at a minimum usually) or pour into smoothie cups and serve right away!
NOTES
You can use regular water or milk instead of coconut milk here. That said, the coconut milk gives this recipe added hydration and flavor that pairs well with mango!
Instead of popsicle molds, you can use an ice cube tray or silicone freezing tray and add popsicle sticks.
This can also be served as a refreshing drink/smoothie!
I usually buy the mango pre-frozen in chunks but you can certainly buy fresh and freeze before making this recipe.
The mango does need to be frozen for the texture to freeze properly here -- non-frozen mango will create a different texture.
