A fun twist on a classic French toast for breakfast with only 5 simple ingredients.

I love any excuse to use the waffle iron for recipes, and French toast was a perfect one! I was getting ready to make French toast one morning and thought - wait, what if I just made this in the waffle iron? I’m glad I decided to try it out because it’s a new favorite breakfast item over here!

This is also a great way to include eggs in your little ones’ diet (assuming no allergies) if they’re not a fan of the texture of eggs as it just mixes into the batter. I also find that the cook time of anything in my waffle iron is typically a bit quicker, so these are seriously ready in just minutes! Possibly my favorite part of this recipe is that it freezes SO WELL. I make a batch of these to store in the fridge and just pop in the toaster for a breakfast ready in just minutes!

INGREDIENTS

  • 6-7 pieces of sandwich bread

  • 1 cup milk of choice

  • 2 eggs

  • 1/2 tsp cinnamon

  • 1/2 tsp vanilla extract

DIRECTIONS

  1. Whisk eggs, milk, cinnamon, and vanilla in bowl

  2. Heat waffle iron on medium heat

  3. Spray with non-stick spray

  4. Dip bread in mixture and place in waffle iron

  5. Heat for 2-3 minutes until golden brown

  6. Cut into squares

  7. Serve right away, store in fridge, or freeze!

SERVING

I serve these in four mini squares to my toddler, but have also served in strips and small bite sizes - you can cut as appropriate based on your little ones’ age. I like to serve with pure organic maple syrup for dipping (you can also brush the syrup on if you want to avoid some mess, lol). These pair so well with some fruit, eggs, or yogurt for a fun & well-balanced breakfast!

SUBSTITUTIONS & ADD-INS

  • Eggs: the general rule of thumb is that 1 egg = 1/4 cup applesauce. I haven’t tried this recipe egg-free yet but will tweak the recipe notes once I do!

  • Milk: I’ve made this recipe with both whole milk and almond milk. I prefer to use whole milk when I can to get the extra nutrition but most milk options should work just fine.

  • Bread: most breads should work well in this recipe! I typically go with a form of sandwich bread but anything that isn’t too thick (or too thin) will waffle well. Depending on the thickness (or thinness) of the bread used, the cook time in the waffle iron will vary.

STORAGE & RE-HEATING

  • Store in air-tight container in fridge for 2-3 days. I like to store in these glass storage containers from Amazon!

  • Store in freezer in air-tight container for up to 2 months. For both storage options, French toast should be completely cooled before storing.

  • To re-heat, you can pop the freezer ones into the toaster or de-frost and re-heat in microwave. For the fridge ones, I like to pop in toaster for about a minute!
