crispy air fryer golden potatoes

A quick, crispy, delicious air fryer side dish.

When I want to make an easy side with minimal preparation time, this is one of my go-to recipes! The ingredients are minimal, the air-fry time is short, and my family loves this side paired with so many of our favorite dishes. This recipe is great for lunches/dinners but it’s ALSO perfect for breakfast! If you have some leftovers, just toss them with sauteed bell peppers and serve with scrambled eggs for a breakfast skillet.

INGREDIENTS

  • 1 lb petite gold potatoes

  • 1 tbsp olive oil

  • 1/4 tsp dried rosemary

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1/4 tsp garlic powder

DIRECTIONS

  1. Preheat air fryer to 400F

  2. Thoroughly wash potatoes and dry off

  3. Cut potatoes into halves or fourths

  4. Toss in bowl with olive oil and seasonings, ensuring all potatoes are coated well

  5. Air fry for 15 minutes, tossing halfway through to get an even crisp

NOTES

  • I leave the skin on for these potatoes when serving, but you could certainly peel if you'd like!

  • Option to add more or less of any seasonings as you prefer -- they may need a pinch more salt when they come out of air fryer.

  • Do not overcrowd your air fryer basket when making these as the potatoes won’t get an even air-fry. If needed, you can do them in a 2-3 smaller batches and you’ll find that they crisp up better this way.

  • You can add as much or as little seasoning as you prefer here. To keep them lower in sodium, start with a smaller amount and taste them after they come out of the air fryer. You can always toss with salt after they’re done cooking.

  • To make these in the oven, pre-heat oven to 425F, follow the recipe as-is before air-frying, and roast on a baking tray for 30-40 minutes tossing halfway through to ensure you get an even roast on the potatoes. They should be easily pierced with a fork when done and slightly roasted

STORING & RE-HEATING

Store in air-tight container in fridge for up to 4 days. To re-heat, you can microwave or toss in a cast iron skillet or a pan for a few minutes.
