mediterranean chicken couscous bowls

A delicious recipe for that leftover protein in your fridge over a bed of some delicious, Mediterranean couscous!

This is one of those recipes that sounds fancy in the title, but you’ll see when you make it that it’s pretty simple. Pearled couscous tossed with some veggies, Greek dressing, and feta cheese makes for a SIMPLE dish that you can have warmed or chilled (think pasta salad) and top with whatever protein you’d like! This would pair SO WELL with my Grilled Turkish Meatball recipe, but you can also serve it under store-bought rotisserie chicken, grilled, chicken, etc. Enjoy!

INGREDIENTS

  • Protein (rotisserie chicken, grilled chicken, grilled meatballs, etc.)

  • 1 cup pearled couscous

  • 1 cup water

  • 1/2 cup chicken broth

  • 1/2 finely diced cucumber

  • Handful of sautéed & chopped onions & bell peppers

  • Crumbled feta cheese

  • 2-3 tbsp Greek dressing

  • Salt & pepper to taste

DIRECTIONS

  • Heat a dash of butter (about 1/2 tbsp) in a medium pot

  • Add 1 cup of couscous and toast with the butter on medium heat for about 3-4 minutes

  • Pour in water and chicken broth and stir well, then top with a dash of salt & pepper

  • Cover pot and bring heat to high until liquid comes to a boil. Once boiling, reduce heat to low and set timer for 14 minutes.

  • Let couscous cool for about 5 minutes, then mix in cucumber, onions, peppers, feta cheese, greek dressing, salt, and pepper.

  • Top with protein of choice (will go great with grilled chicken, rotisserie chicken, grilled meatballs) & serve!

NOTES

  • This couscous can be served warmed or chilled. It actually tastes great strait from the fridge. If serving cold, let all your ingredients cool before combining (onions, peppers, couscous). The protein that you add on top should be warmed.

  • To prep the peppers & onions, I use a frozen bag (you can find at most U.S. grocery stores) and sauté strait from frozen with olive oil, salt, and pepper.

  • Keep in fridge in air-tight container for 3-4 days.
