butter garlic carrot fries (two ways)

A savory, family-favorite with two simple ways to cook!
I feel like any food item becomes a little cooler when you call it a “fry” and this one is no exception. This recipe is a fun and DELICIOUS way to serve carrots (with some butter, garlic, and Italian seasoning) to the fam! My toddler enjoys these so much, esp when I serve with something to dip them in!
INGREDIENTS
6-7 medium carrots
1 tbsp melted (and cooled) butter
1-2 cloves minced garlic
1/4 tsp Italian seasoning
1/4 tsp salt
1/4 tsp pepper
AIR FRYING DIRECTIONS
Preheat air fryer to 385F
Peel & cut carrots into thin, fry-like shapes and add to a medium/large bowl
Mix together melted butter, minced garlic, and Italian seasoning in a small bowl, then pour over carrots and toss well
Add carrots in batches to air fryer (so not to overcrowd air fryer basket) and spray with a light spray of avocado oil
Air fry for 12-14 minutes
OVEN-ROASTING DIRECTIONS
Preheat oven to 400F
Peel & cut carrots into thin, fry-like shapes and add to a medium/large bowl
Mix together melted butter, minced garlic, and Italian seasoning in a small bowl, then pour over carrots and toss well
Add carrots to baking sheet lined with parchment paper and season with salt and pepper
Bake for 30-40 minutes, tossing halfway through. Will be slightly browned and easily pierced with a fork when done.
NOTES
The thinner (or thicker) you cut the carrots in this recipe, the cook times in the oven and air fryer will vary. It's best to check on the carrots a few times through cooking to make sure they're not over-cooking!
To ensure an even roast in oven and/or air-fry, don't overcrowd the baking sheet and air fryer baskets with the carrots. I typically air fry in a couple batches and make sure the carrots are spread evenly on a baking sheet.
Store in fridge for up to 4 days.
You can add more or less garlic based on your preference! I wouldn't go more than 2 minced cloves though.
STORING & RE-HEATING:
Store in air-tight container in fridge for 2-3 days or freeze for up to 2 months. To re-heat from frozen, thaw in fridge overnight (or in microwave) and heat for about 10 seconds (microwave times will vary, but these are small and take little time to warm up).
