brain-boosting brownie bites (no-bake!)

A simple and healthy no-bake snack!

These brain-boosting brownie bites are a delicious, no-bake toddler snack packed with nutrition! They also store in the fridge/freezer so well, making them a wonderful make-ahead recipe to prep for busy weeks. My little one (and our whole family) loves these!

As these are small and round in shape, I would recommend to littles 2+ (or when you feel confident that they can hold and take bites out of them). That said, the Tiny Sprouts superseeds are suitable for little ones 6 months+ (or when they start solids+).

INGREDIENTS

  • Pitted medjool dates: if the dates come with the pit inside, gently open and remove the pits.

  • Walnuts: you could substitute for other nuts like almonds or cashews, or omit all-together.

  • Tiny Sprouts Brain Boosters: The key ingredient in this brain-boosting recipe! These give this recipe the ultimate brain boost with unique Flax, Chia & Hemp Organic Superseed Blend with vegan omega-3 DHA.

  • Almond flour: this type of flour is higher in fiber, fat, and protein but can be substituted for regular flour if you don’t have almond flour on-hand.

  • Cocoa powder: Use unsweetened here as the dates in the recipe will add the sweetness that this recipe needs! The cocoa powder gives these bites the key brownie flavor.

  • Chocolate chips: Optional, but give these bites some delicious flavor!

  • Vanilla extract: For a nice little taste of vanilla in these bites!

  • Salt: Just a pinch is all you need in this recipe as it enhances the taste!

DIRECTIONS

  1. Place all ingredients (except chocolate chips) in a food processor and pulse for about 10 seconds (until texture is very fine and crumbly). If your food processor is smaller, first pulse the dates by themselves before adding ingredients.

  2. Add chocolate chips (if using) and pulse until they've broken down and mixture is soft.

  3. Roll the mixture into balls (should make anywhere from 14-16) and let them chill in the fridge. Serve chilled!

PRODUCTS USED IN THIS RECIPE

  • Food processor: I use this KitchenAid one in SO many recipes. It’s small (great for storage) but holds a lot and purees/chops so well. Can’t recommend this one enough!

  • Magnetic measuring spoons: one of my favorite kitchen tools that stack together so nicely in a drawer!

  • Measuring cups: these are some of my favorite!

  • Reusable freezer bags: I like sealing in these to freeze! Takes up minimal space and I can re-use them.

  • Glass Food Storage Containers Set with Leakproof Lids: These are one of my absolute favorite kitchen items for food storage and store these bars wonderfully. Lots of sizes and they seal so well.

  • Cookie scoop: this scoop creates the perfect size for these bites. I scoop with this then roll into round bite sizes with my hands.

NOTES

  • Store in fridge for about one week in sealed container.

  • Freeze for up to 3 months.

  • If you feel that mixture is too hard after pulsing everything, you can add about 1 tbsp more water and pulse further.
