banana carrot blender waffles

Freezer-friendly, minimal preparation, toddler-approved!

This waffle recipe has both fruits & veggies (and you can mix in add-ins like blueberries, chocolate chips, etc.) and the best part? They can be turned into CARS & TRUCKS through a fun waffle maker! You can certainly use a regular waffle iron here too. Freezer-friendly, and a recipe I’ve been making for my little one since he started solids for an easy blender and waffle iron breakfast!

INGREDIENTS

  • 1 ripe banana

  • 1/2 cup milk of choice (I use whole milk here)

  • 1/2 cup rolled oats

  • 1/2 cup whole wheat flour

  • 1/2 tsp baking powder

  • 1/4 tsp cinnamon

  • 1 egg

  • 1/4 tsp vanilla extract

  • 1 finely grated carrot (with juices rung out)

DIRECTIONS

  • Place all ingredients in high-speed blender & blend until texture is smooth with no clumps

  • If including add-ins as mentioned above, mix those in by hand after blending

  • Spray waffle iron with non stick spray & pour in batter, being careful not to over or under fill.

  • Waffle them until slightly golden!

NOTES

  • Option to add 1 tbsp maple syrup to sweeten (if banana isn’t very ripe you may need to add a little bit to sweeten)

    Superseed boosters like milled chia seeds, milled flax seeds are an extra add-in to include some extra nutrition!

    Add-ins like blueberries, chocolate chips, sprinkles (mix these in by hand at the end - don’t put in blender) can be included as well!

    Store in fridge for 2-3 days, freeze for up to 3 months in air-tight container.
