butter maple baby carrots

A savory veggie side dish with a hint of sweetness.

With only a few minutes to prepare, this easy side dish is packed with delicious buttery, maple flavor and pairs so well with several dishes! This is one of my toddler’s FAVORITE ways to eat carrots and I was so (pleasantly) shocked the first time I made these and he gobbled them up. They’re great for prepping ahead for the week and serving as a side dish along with your favorite main courses. In my opinion, this is the BEST and EASIEST way to prepare roasted baby carrots. Enjoy!

INGREDIENTS

  • 1 lb baby carrots

  • 1 tbsp melted and cooled unsalted butter

  • 1 tbsp maple syrup

  • Sprinkle of salt & pepper

DIRECTIONS

  • Preheat oven to 425F

  • Rinse baby carrots and pat dry

  • Place carrots on a baking sheet (I use parchment paper) and drizzle over melted butter and maple syrup and toss it all together

  • Sprinkle with salt and pepper (you can always add more to taste after they're done baking)

  • Bake for 40-45 minutes, tossing halfway through so they get an even roast. They should be easily pierced with a fork when done!

  • Let cool & enjoy!

NOTES

  • Store in fridge in air-tight container for up to 4 days.

  • Maple syrup is optional in this recipe but adds a unique sweetness to the carrots and pairs well with butter. You can omit and just toss with butter & seasonings and they will still taste great.
