avocado roll-ups (only 3 ingredients)

A no-cook lunch with only a few ingredients!
On days where I don’t have leftovers, don’t have a freezer stash to pull from, or just don’t have time (hard to come by), this simple and nutritious lunch is a staple for us! Ready in just minutes with zero cooking required AND it comes with an opportunity to sprinkle in some added nutrition with superseed boosters!
The hemp hearts I use in this recipe are an optional add, but are a favorite magical ingredient around here. The ones I use are from Tiny Sprouts and have some great nutrition like iron, zinc, magnesium, and omega 3! Code MYTODDLERSKITCHEN gets you 10% off your purchase on their site! INGREDIENTS
2 pieces of sandwich bread
1/2 mashed avocado
Sprinkle of Everything but the Bagel seasoning (see notes)
Sprinkle of Hemp Hearts (see notes)
DIRECTIONS
Flatten out bread with rolling pin (or press down with hands to flatten)
Mash half of an avocado in a separate small plate or bowl
Spread 1/4 mashed avocado on each piece of bread
Sprinkle Everything but the Bagel Seasoning and Hemp Hearts (I just do a pinch of each)
Roll tightly, then cut with a bread knife into smaller pieces (each sandwich bread should result in about 4 small rolls)
Serve immediately or pack in a cooled lunchbox to serve about 3 hours after packing!
NOTES
I find the Everything but the Bagel seasoning at my local Trader Joe's, but most U.S. grocery stores carry a similar version that will work. The flavor of that seasoning with avocado pairs together so well.
Hemp hearts are totally optional in this recipe, but are a fabulous easy way to sprinkle in some added nutrition. You can swap out for other superseed boosters or omit all together.
Any sandwich bread will work in this recipe. For best results, warm in microwave for about 10 seconds before rolling, which will result in the roll holding together a bit better.
